The hazelnut was regarded as sacred in ancient times by many people,including the Turks for whom it was also a symbol of peace and health.The Ancient Greek god Hermes,
messenger and protector of merchants,carried a staff which was actually a hazelnut wand,and the plant continued to play
an important part in the rituals of the Ancient Romans,who bound rams in hazel branches for burning as sacrifices to the gods at weddings and other celebrations.
Islamic traditions includes many references to the hazelnut,which was regarded as a heavenly fruit and one of the thirty varieties which God provided Adam after his crea-tion.One of the plants which human beings learned to cultivate at an early stage was the hazelnut,and this is the most productive crop grown in Turkey's Black Sea region,where it thrives in the mild rainy climate.Twelve different varieties of hazelnut are grown in Turkey,all hybrids derived from the wild species Corylus avellana which grows to 5-6 m.in height,and cultivator Corylus maxima.Popular names for these varieties ar the Tombul,
Palaz,BademMincenaG�k,Kal�nkaraKan,Cavcava,�ncekara,Ku�,
Fo�a,Kargalak and Ordu �kizi.The hazelnut was introduced to Sicily and Spain bt the Arabs.
The hazelnut only fuits under the right climatic conditions
between 36-41 of latitude in the Northern hemisphere,at most
30 km.from the coast andup to a max.of 750-1000m.altitude.
Turkey's long Black Sea coast produces an astonishing 65-75percent of the world's entire hazelnut crop.The world's finest hazelnuts in terms of flavour and oil content are those grown in the province of Giresun,and to alesser ex-tent of in the districts of Be�ikd�z�,�ar��ba�� and Ak�a-abat in Trabzon.The next grade of hazelnut,known as the Levant is grown inTrabzon,Ordu,Samsun,Bolu,Sakarya,Zonguldak
and Bart�n.Hazelnuts are now used in commercially produced
chocolates,biscuits,cakes,confectionery and ice-cream.Today more than 300.000 tons of hazelnutas are used in chocolate and biscuit manufacture every year.Hazelnuts mature in August and are picked while still green and laid out to dry.Within a few days they they turn darker and get drier and shelled by amachine called"patoz".The shelled nuts known as �ec f�nd�k are again spread outside to dry.When completely dried,the nuts are packed into sacks ready for sale for private buyers or to the hazelnut cooperative Fis-kobirlik,which is the largest buyer.It's memebers are 210.000 growers belonging to 49 local cooperatives.The cooperative has astorage capacity of 300,000 tons and a dai-ly proceessing capacity of645 tons employs 3000 people and holds the ISO 9002 certificate.It is one of the largest such cooperatives in the world.

Between 60 and 70 high percent of the oil in hazelnut consists of unsaturated fatty acids which are beneficial to the body in many ways.For example,hazelnut oil helps the body to maintain its heat and is a source of fat soluble vitamins.The linoleic acid found in hazelnut oil is not produced by the body and so must be provided by food stuffs.
Linoleic and oleic acids are essential nutrients due to the role of keeping down the cholesterol level in the blood thus makes the hazelnut play an important role in preventing
heart and artery disease.They are also a rich source of vitamins B.Vitamins B2 and B6 are crucial for blood productivity and for mental health of adults and even more important for growing children.They also contain large quantities of vitamin E which inhibits the disintegration of the red blood cells,so preventing anemia,and also inhibits the formation and the spread of cancerous cells.Hazelnuts are one of the richest sources of calcium
needed for bones and teeth,of iron necessary for the nerveous system and muscle tissue,is also present in considerable quantities.With high levels of potassium, mag-
nesium and calcium but low levels of sodium,hazelnuts are ideally balanced to promote bone development and health while keeping blood pressure down.All in all,hazelnuts are an important part of a healthy diet...
